Sugar Free and Gluten Free
Ingredients
- 2 cups gluten free plain flour
- 1 tsp gluten free baking powder
- 1 egg lightly beaten
- ⅓ cup Perfect Sweet™ xylitol
- 175 grams butter
- 2 tablespoons rice milk or soy milk
- ½ a vanilla bean
Method
- Line 2 trays with baking paper and preheat a fan forced oven to 180°.
- Using a small sharp knife slice the vanilla bean length ways and open it up, then using the side of the knife gently scrape the seeds from inside the bean
- In a small bowl combine the vanilla seeds with some of the Perfect Sweet® xylitol and break the seeds up using the back of a spoon
- In a mixing bowl combine the butter, Perfect Sweet® xylitol & vanilla seeds
- Using a beater cream these ingredients together for 1 minute until pale and fluffy
- Sift baking powder and flour over butter mixture
- Add milk and egg then mix till just combined
- Roll heaped teaspoon size balls and and place spread apart on tray, allowing a little space for spreading. Flatten slightly using two fingers (be warned this is a sticky, messy process, do not be tempted to add extra flour. Also to achieve the look in the photo don’t remove batter off your hands in between each cookie, as this stickiness will create the prickly effect)
- Bake for 10 minutes, swap trays around and bake for a further 5 minutes
- Remove from oven and leave on trays to cool.
