Fluffy, moist, easy to make….this is the most perfect cake! Frost with our Butter Cream Frosting and you have a gorgeous addition to any afternoon tea!
Ingredients
- 60g coconut flour
- ½ tsp baking soda
- ¼ tsp salt
- 8 x 50g eggs, separated
- 2 tsp cream of tartar
- ½ cup coconut oil, softened
- 60g SlimSweet™ Monk Fruit sweetener
- 1 tsp lemon zest
Butter Cream Frosting
- 250g cream cheese
- 100g unsalted butter
- 60g SlimSweet™ Monk Fruit sweetener
- 2 tsp pure vanilla extract
Method
- Preheat the oven to 180°C (160° C FF). Line a 20cm cake pan with baking paper.
- In a large bowl, mix coconut flour, baking soda and salt and set aside.
- In a separate clean bowl, beat your egg whites and cream of tartar until stiff peaks form.
- In another large bowl, mix the coconut oil, SlimSweet™ Monk Fruit sweetener and egg yolks. Whisk until glossy and well combined.
- Mix the oil mixture into the dry ingredients until combined. Gently fold in your egg whites until completely combined. Gently transfer your cake batter into the prepared pan.
- Bake for 20 – 25 minutes or until a skewer inserted into the centre comes out clean or with just a few crumbs on it. When the cake has cooked, remove from the oven and cool completely before frosting.m Cover and fill the cake with our Butter Cream Frosting. Sprinkle with shredded coconut.
Butter Cream Frosting
- Beat cream cheese, butter and Monk Fruit sweetener until smooth.
- Mix in vanilla extract. Taste and adjust sweetness.
- Fill the cake and cover with the Cream Frosting.
