Pink Chia Pudding

Another way of getting your daily beetroot intake if you are not a fan of fresh beetroot, is to add beetroot powder to your food.  We have added it to our chia pudding and as it has a little bit of a sweet taste, it can easily blend into your puddings, be added to yoghurt, smoothies, your cake recipes.  It really is an easy addition and makes for a really pretty colour too!  Just be aware that it stains, the same way as fresh beetroot does so handle carefully.

Ingredients

  • 2 cups unsweetened coconut milk
  • ½ cup chia seeds
  • ½ tsp pure vanilla extract
  • 1-2  tsps Perfect Sweet™ xylitol (to taste)
  • ½ – 1 tsp of beetroot powder
  • ¼ tsp cinnamon

Method

If you want a smooth pudding:

  1. Blend all of the ingredients in a high speed blender until smooth.
  2. Pour mix into serving bowls/ jars and place in the fridge for a few hours to gel.  

If you like to have the chia seeds whole:

  1. Starting with the coconut milk, place all ingredients except the chia seeds into the high speed blender and blend until smooth.  Add the chia seeds and mix well.
  2. Pour mix into serving bowls/ jars and place in the fridge for a few hours to gel. 

Decorate as you like, we added a spoon of yoghurt, pomegranate seeds and a sprig of mint.
